Blueberry or Huckleberry Muffins

Yield: Makes 10-12 muffins.

Ingredients

Cooking Directions

  1. Heat oven to 375 degrees
  2. Use non-stick cooking spray, vegetable shortening, or paper liners for easy removal.
  3. Beat egg, add milk and oil.
  4. Stir in 2-1/2 cups Mix all at once.
  5. Stir until all the flour is moistened--do not overmix. Overmixing will make the muffins tough. Muffin batter will be lumpy.
  6. Fold in berries.
  7. Fill muffin cups 3/4 full and bake about 20 min. until golden.
  8. Cool a few minutes before removing from pan.
