Cinnamon Breakfast Muffins

Cinnamon Breakfast Muffins

Serves: 12 large muffins.
Ingredients
  • 1/4 cup shortening
  • 1/2 cup sugar
  • 1 egg
  • 2 cups Buttermilk Biscuit Mix
  • 2 teaspoons baking powder
  • 1/4 teaspoon nutmeg
  • 1 cup milk
  • 1/2 cup melted butter
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
Instructions
  1. Mix shortening, sugar, and egg.
  2. Sift together Buttermilk Biscuit Mix, baking powder, and nutmeg.
  3. Stir dry mixture into creamed mixture alternately as you add milk.
  4. Fill greased muffin cups 2/3 full.
  5. Bake at 375 degrees for 20 minutes, or until lightly browned.
  6. Combine sugar and cinnamon.
  7. While still warm, roll muffins in melted butter, then in cinnamon-sugar mixture.
