Strawberry Rhubarb Cobbler

Ingredients
  • 3 cups strawberries (cleaned)
  • 2 cups rhubarb (sliced)
  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 3 cups Muffins! Muffins! Mix
  • 2 eggs
  • 1/4 cup melted butter
  • 1 1/2 cups milk
  • 1/4 cup sugar
  • 1/4 cup flour
  • 2 tablespoons butter or margarine
  • 1 tablespoon sour cream
Instructions
  1. Combine fruit, 1 cup sugar, and cornstarch in a saucepan and cook until mixture comes to a boil.
  2. Pour into a 9×13\” baking pan.
  3. Mix together Muffins! Muffins! Mix, eggs, melted butter, and milk. Pour over hot fruit.
  4. Combine 1/4 cup sugar, flour, butter, and sour cream and blend until crumbly.
  5. Add crumb topping on top of dough on fruit.
  6. Bake at 350 degrees for 25-30 minutes.
