How many pancake recipes have you tried so far? Presumably quite a lot, particularly if you are a morning person, love to cook or simply like to indulge in a treat as scrumptious as pancakes. You probably have already tried Martha’s way of cooking pancakes, or copied something from Top Chef, or perhaps like to stick to your Grandma’s secret recipe. Well, case in point is that there are plenty of pancake recipes out there. But not all promise to be as healthy as they are delicious. This one surely promises to be both.
This recipe is perfect for children, pregnant women and the elderly who need a good dose of iron intake daily. Iron deficiency is a global problem and in fact, is the most common of nutritional deficiencies in the world. And with the breakfast being the most important meal of the day, this recipe combines the goodness of iron, the deliciousness of pancakes and the 15-minute solution to a perfect breakfast for the entire family.
- 1 cup Baby cereals with iron, preferably oatmeal, look for organic food products like Butte Creek Mill’s Quick Oats
- ½ cup unbleached white flour
- ¼ cup ground flax seed
- ½ cup whole wheat flour
- 2 tbsp no aluminum baking powder
- ¼ cup sugar
- 2 cups whole milk
- 1 tsp salt
- 2 eggs
- ½ apple’s puree
- 2 bananas
- ⅓ tbsp vegetable oil
- Mix all the ingredients together except for the banana and apple puree and whisk them well.
- Puree the banana in another bowl.
- Add the apple puree and mix well.
- Add the banana mixture to the other mixture and mix well for a few minutes.
- Heat a large non-stick skillet on medium heat.
- Pour equal proportion of the mixture and spread it around by tilting the pan in clockwise or anticlockwise direction.
- Cook one side for about two minutes or until bubbles begin to form on the pancakes.
- Flip to the other side and cook for another two minutes.
