Ingredients
  • Strawberry Filling
  • 2 tbsp cornstarch/2 tbsp water
  • 2 cups diced strawberries
  • 1/4 cup maple syrup
  • 1 tbsp sugar
  • Oatmeal and Topping
  • 2 1/4 cup organic Butte Creek Mill quick oats
  • 1 tsp cinnamon
  • 1 cup almond butter
  • 1/4 cup maple syrup
  • 1/4 cup apple butter
  • 1 egg, beaten
  • 1/2 cup sliced almonds
Instructions
  1. Filling:
  2. Mix cornstarch with water to a milky consistency. Mix strawberries, syrup and sugar in a pan on medium heat, boiling and stirring. Take off heat and stir in your cornstarch mixture. Put aside to cool. Preheat oven to 325 and line an 8×8 pan with foil.
  3. Oat crust:
  4. Mix quick oats, cinnamon, almond butter, maple syrup, apple butter, and egg well. Put aside 1/2 cup of this mixture. Press the rest into the pan firmly, then spread the strawberry jam evenly over that. Top with the remaining 1/2 cup oat mixture, adding in the sliced almonds. Press with a spatula.
  5. Bake this mixture for a half hour, or until the topping is browned. Cool off for at least a half hour, or put in the fridge to speed up the cooling process. Cut into 12 squares and serve. You can keep these bars in the fridge for up to one week, but they won’t be around that long! These yummy treats are a perfect addition to your next summer gathering, or just because.
