Apple Muffins
Ingredients
  • 2 1/2 cups Muffins! Muffins! Mix
  • 1/3 cup oil
  • 1 egg
  • 3/4 cup milk
  • 1 cup peeled-chopped apple
  • 1/4 tsp nutmeg (or 1 tsp apple pie spice)
  • 1 tsp vanilla
  • cinnamon/sugar to top
Instructions
  1. Heat oven to 375 degrees.
  2. Use non-stick cooking spray, vegetable shortening, or paper liners for easy removal.
  3. Beat egg, add milk and oil.
  4. Stir in 2-1/2 cups Mix, apples, and spices all at once. Stir until it is moistened–do not overmix. Overmixing will make the muffins tough. Muffin batter will be lumpy.
  5. Fill muffin cups 3/4 full.
  6. Sprinkle cinnamon and sugar on top of muffins
  7. Bake about 20 min. until golden brown.
  8. Cool a few minutes before removing from pan.
