Cinnamon Breakfast Muffins

Serves: 12 large muffins.
Ingredients
- 1/4 cup shortening
- 1/2 cup sugar
- 1 egg
- 2 cups Buttermilk Biscuit Mix
- 2 teaspoons baking powder
- 1/4 teaspoon nutmeg
- 1 cup milk
- 1/2 cup melted butter
- 1/2 cup sugar
- 1 teaspoon cinnamon
Instructions
- Mix shortening, sugar, and egg.
- Sift together Buttermilk Biscuit Mix, baking powder, and nutmeg.
- Stir dry mixture into creamed mixture alternately as you add milk.
- Fill greased muffin cups 2/3 full.
- Bake at 375 degrees for 20 minutes, or until lightly browned.
- Combine sugar and cinnamon.
- While still warm, roll muffins in melted butter, then in cinnamon-sugar mixture.
