Cranberry-Orange Muffins

Cranberry Orange Muffins

Serves: 10-12 muffins.
Ingredients
  • 2 1/2 cups Muffins! Muffins! Mix
  • 1/3 cup oil
  • 1 egg
  • 3/4 cup milk
  • 1 large orange (need rind)
  • 1/2 cup chopped cranberries
  • 1 teaspoon vanilla
  • 1/4 cup sugar
  • 1/4 cup flour
  • 2 tablespoons butter or margarine
Instructions
  1. Heat oven to 375 degrees.
  2. Use non-stick cooking spray, vegetable shortening, or paper liners for easy removal.
  3. Beat egg, add milk , vanilla and oil.
  4. Stir in 2-1/2 cups Mix, and grated rind from the orange all at once.
  5. Stir until all the flour is moistened–do not overmix. Overmixing will make the muffins tough. Muffin batter will be lumpy.
  6. Fill muffin cups 3/4 full.
  7. Top with crumbs made from sugar, flour, and butter.
  8. Bake about 20 min. until golden.
  9. Cool a few minutes before removing from pan.
