Oat Scones

  • 2 tablespoons butter
  • 2 1/2 cup Scone Mix
  • 1/2 cup golden raisins
  • 1 egg
  • 1/2 cup non-fat yogurt
  • 2 tablespoons oil
  1. Preheat oven to 400°.
  2. Melt butter in a small saucepan over low heat until light brown (do not burn).
  3. Skim off foam, cool and then add egg, yogurt, oil and blend.
  4. In a bowl, mix 2-1/2 C Scone Mix with raisins, gently stir in wet ingredients.
  5. Lightly knead several times to form ball.
  6. Pat out into 8 inch circle and cut into 8 wedges.
  7. Place on lightly oiled baking sheet.
  8. Bake 12 min. or until firm and golden brown.
  9. Serve warm.
  10. You can add currents, dried fruit or chopped nuts.
  11. For a delicious shortcake, using berries or fruit, omit raisins and cut into circle, if desired.
