Puff Pancakes

Puff Pancakes
Serves: Serves 8.
Ingredients
  • 1 cup Buttermilk Biscuit Mix
  • 1 cup water
  • 1/2 cup butter
  • 4 eggs
Instructions
  1. Bring water and butter to a boil in large saucepan.
  2. Add Biscuit Mix, stirring vigorously until mixture leaves sides of pan and forms a ball.
  3. Remove from heat.
  4. Add eggs one at a time, beating well after each addition.
  5. Spread mixture evenly onto bottom and sides of two generously greased 9-inch pie pans.
  6. Bake at 400° for 15 min.
  7. Lower heat to 300° and bake 10 more minutes, or until golden brown.
  8. Cut into wedges.
