Traditional Zucchini Bread Recipe
This will make 2 loaves
1 pound zucchini
3 cups whole wheat pastry flour
2 teaspoons baking powder
1/4 teaspoon baking soda
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1 teaspoon salt
2 large eggs
1 cup white sugar
1/2 cup brown sugar, packed
3/4 cup olive oil
2 teaspoons vanilla extract
If you are ready to make a drastic difference in the way your zucchini bread tastes, try adding a cup of the following:
- Chopped Nuts
- Raisins
- Chocolate Chips
- Blueberries
- Herbs
Preheat the oven to 350°F. Grease two 8×4″ loaf pans.
Grate the zucchini until you have nice shreds. Place the gatherings in a paper towel and squeeze them to press out as much moisture as possible to prevent the bread from becoming too moist.
Combine the flour, baking soda, spices, and baking powder in a mixing bowl. Whisk the eggs, olive oil, vanilla extract, and sugar in a separate bowl.
Add your special ingredients to the flour mixture at this time and gently pour the liquids over the flour mixture. Gently fold the flour and mixture together until it is well blended. Divide the batter evenly between the two loaf pans. Bake the bread 45-50 minutes until a toothpick is inserted and comes out clean. You will know when the bread is done as the crust will be golden-brown and will feel springy if you touch the top. Allow the bread to cool for around 10 minutes before you place them on a wire rack to cool.
