Strawberry Jam Oatmeal Bars
Summer’s just upon us, and with summer comes strawberries! This fresh fruit is packed with fiber, antioxidants and vitamin C, helping to increase your good cholesterol, lower blood pressure and prevent cancer, says WebMD. Whether you pick up some fresh berries at the grocery store, local farmer’s market or pick your own, you can incorporate strawberries into a sweet summer snack. Make these oatmeal bars with home-made strawberry jam for a quick pick-me-up this season.
Strawberry Oatmeal Bars

Ingredients
- Strawberry Filling
- 2 tbsp cornstarch/2 tbsp water
- 2 cups diced strawberries
- 1/4 cup maple syrup
- 1 tbsp sugar
- Oatmeal and Topping
- 2 1/4 cup organic Butte Creek Mill quick oats
- 1 tsp cinnamon
- 1 cup almond butter
- 1/4 cup maple syrup
- 1/4 cup apple butter
- 1 egg, beaten
- 1/2 cup sliced almonds
Instructions
- Filling:
- Mix cornstarch with water to a milky consistency. Mix strawberries, syrup and sugar in a pan on medium heat, boiling and stirring. Take off heat and stir in your cornstarch mixture. Put aside to cool. Preheat oven to 325 and line an 8×8 pan with foil.
- Oat crust:
- Mix quick oats, cinnamon, almond butter, maple syrup, apple butter, and egg well. Put aside 1/2 cup of this mixture. Press the rest into the pan firmly, then spread the strawberry jam evenly over that. Top with the remaining 1/2 cup oat mixture, adding in the sliced almonds. Press with a spatula.
- Bake this mixture for a half hour, or until the topping is browned. Cool off for at least a half hour, or put in the fridge to speed up the cooling process. Cut into 12 squares and serve.
