Ingredients for Irish Coffee Cake:

  • 2 3/4 cups of Butte Creek Mill’sall-purpose, unbleached flour
  • 1/4 cup darkly brewed French or Italian roast coffee
  • 2 tablespoons instant espresso granules
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 cup unsalted butter (softened)
  • 1 8-oz package of cream cheese (softened)
  • 1 cup sugar
  • 1 cup brown sugar (firmly packed)
  • 3 eggs (at room temperature)
  • 1 tablespoon vanilla extract
  • 1 cup of your favorite Irish cream liqueur
  • 3/4 cup mini chocolate chips

You will also need a bundt pan (approx 10-cup), greased and floured.

How to Make it:

  1. Prepare the brewed coffee. In a mug, blend the instant espresso into the coffee. Allow it to cool to room temperature.
  2. Preheat the oven to 350°F.
  3. In a bowl, mix together the flour, baking powder, and salt. Set aside.
  4. Use a mixer to cream the butter, cream cheese, and sugars until fluffy. Add the eggs one at a time and continue to cream until combined well. Finally, add the coffee and the vanilla extract. Mix well.
  5. Add half of the dry ingredients and hand stir until the ingredients are just combined.
  6. Pour in the Irish cream and stir until combined.
  7. Add in the remaining dry ingredients and stir until combined well.
  8. Fold in the chocolate chips.
  9. Pour the batter into the prepared bundt pan. Gently tap the pan a few times on the counter to force air bubbles up and out of the batter.
  10. Bake for 55 to 60 minutes.
  11. Allow the cake to cool for about 15 minutes before flipping it out of the bundt pan.
  12. Set the cake on a wire rack until completely cool.
