Puff Pancakes
Serves: Serves 8.
Ingredients
- 1 cup Buttermilk Biscuit Mix
- 1 cup water
- 1/2 cup butter
- 4 eggs
Instructions
- Bring water and butter to a boil in large saucepan.
- Add Biscuit Mix, stirring vigorously until mixture leaves sides of pan and forms a ball.
- Remove from heat.
- Add eggs one at a time, beating well after each addition.
- Spread mixture evenly onto bottom and sides of two generously greased 9-inch pie pans.
- Bake at 400° for 15 min.
- Lower heat to 300° and bake 10 more minutes, or until golden brown.
- Cut into wedges.
