Ingredients for Southwest Sunrise Quiche
- One prepared and baked single-crust pie crust (see directions below)
- 2 tablespoons of Butte Creek Mill’s fresh-ground cornmeal
- 1 1/2 cups Monterey Jack cheese, shredded
- 1 cup cheddar cheese, shredded
- 1 4-oz can of diced green chiles, undrained
- 3 large eggs
- 3/4 cup sour cream
- 1 tablespoon fresh cilantro, minced
- 2-4 drops of hot pepper sauce, optional
To make your own pie crust:
If you’re in a hurry, you can always purchase a pre-made pie crust at your grocery store. However, making one from scratch is not only simple, but it’s also much more delicious!
In a medium bowl, combine 1 1/4 cups of Butte Creek Mill’s soft, white spring wheat flour and 1/4 teaspoon of salt. Use a pastry knife to cut in 1/2 cup of cold butter until the mixture is crumbly. Gradually add 3-5 tablespoons of ice water. Mix with a fork until the dough holds together and can be shaped into a disk. Refrigerate for one hour.
Roll the dough on a lightly floured surface into a 1/8-inch thick circle. Carefully transfer the dough to a 9-inch pie plate. Trim the crust to about 1/2 inch beyond the plate’s rim and flute the edge as desired. Refrigerate for 30 minutes.
Preheat the oven to 450°F.
Remove the pie plate from the refrigerator. Line the unpricked crust with two layers of heavy-duty foil. Bake at 450°F for 8 minutes. Remove the foil and bake for another 5 minutes. Cool the pie plate on a wire rack.
To Make the Quiche:
- Preheat the oven to 350°F.
- Sprinkle the cornmeal over the bottom of your prepared/baked crust.
- In a small bowl, combine the cheeses and then set aside about 1/2 cup to use later as the topping.
- Stir in the green chiles and sprinkle in the pie crust/
- In another small bow, whisk together the eggs, sour cream, and cilantro. You can add a few drops of hot pepper sauce if desired. Pour the mixture into the crust.
- Sprinkle the reserved 1/2 cup of cheese onto the top.
- Bake at 350°F for 35-40 minutes or until a knife inserted in the center comes out clean.
- Allow the quiche to cool for 10 minutes before cutting.
