Banana Nut Muffins

Serves: 10-12 muffins.
Ingredients
  • 2 1/2 cups Muffins! Muffins! Mix
  • 1/3 cup oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup mashed bananas
  • 1 teaspoon vanilla
  • 2 tablespoons brown sugar
  • 1 cup chopped walnuts
Instructions
  1. Heat oven to 375 degrees.
  2. Use non-stick cooking spray, vegetable shortening, or paper liners for easy removal.
  3. Beat egg, add milk, bananas, vanilla, brown sugar and oil.
  4. Stir in 2-1/2 cups Mix all at once.
  5. Stir until all the flour is moistened–do not overmix. Overmixing will make the muffins tough. Muffin batter will be lumpy.
  6. Fill muffin cups 3/4 full, top with chopped walnuts.
  7. Bake about 20 min. until golden.
  8. Cool a few minutes before removing from pan.
