Buckwheat Flapjacks

Serves: about ten 4 inch flapjacks.
Ingredients
- 1 egg
- 1 cup buttermilk
- 1 tablespoon oil
- 1 cup Buckwheat Flapjacks Mix
Instructions
- Beat egg, add other ingredients in order listed, beat until smooth.
- Grease griddle. Heat until drops of water skitter on griddle.
- Spoon batter onto hot griddle.
- Turn flapjacks as soon as they are puffed and full of bubbles, but before bubbles break.
- Bake other side until golden brown.
