Carrot Cake

Ingredients
  • 2 cups Pancake Mix
  • 1 1/2 teaspoon baking soda
  • 2 teaspoons sugar
  • 2 cups sugar
  • 1 1/2 cup oil
  • 4 eggs
  • 1 cup chopped walnuts
  • 3 cups grated carrots
  • 8 ounces cream cheese
  • 1 1/2 teaspoon vanilla
  • 1/4 cup butter
  • 3/4 pound powdered sugar
Instructions
  1. In mixer or by hand, beat sugar and oil.
  2. Add eggs and beat thoroughly.
  3. Add flour mixture and mix well.
  4. Stir in nuts and grated carrots.
  5. Grease and flour 9×12 sheet pan.
  6. Bake at 325° for 50 minutes or until cake springs back when touched lightly in center.
  7. Beat cream cheese, vanilla, butter, and powdered sugar together and spread on cooled cake
