Fresh Blackberry Pie

This time of year, everybody is looking for blackberry recipes and not much is better than a Fresh Blackberry Pie recipe loaded with ripe, sweet, plump blackberries. This blackberry pie recipe uses fresh blackberries that aren’t baked to deliver a pie that will make your mouth water!

 

 

Fresh Blackberry Pie
Serves: 1 pie
Substitute strawberry jello and fresh strawberries for a Fresh Strawberry pie.
Ingredients
  • 1 cup Unbleached White Flour
  • 1/2 cup butter
  • 1/4 cup powdered sugar
  • 1/4 cup chopped pecans
  • 3 tablespoons cornstarch
  • 1 cup sugar
  • 1 cup water
  • 2 tablespoons corn syrup, light
  • 3 tablespoons black cherry jello, regular (not sugarfree)
  • 4 cups fresh blackberries
Instructions
  1. Mix flour, butter, powdered sugar and pecans until they come together for a crust.
  2. Pat into a pie pan. Do not turn over edges of pan.
  3. Bake at 400 for 12-15 minutes, then cool.
  4. Cook until thick cornstarch, sugar, water.
  5. Add cornsyrup and jello.
  6. Cool to luke warm.
  7. Place berries on bottom of pie plate on crust.
  8. Pour 1/2 of jello mixture over.
  9. Place remainder of berries in the pie pan.
  10. Pour remainder of jello mixture over the top of berries.
  11. Refrigerate 4 hours or overnight.
