Carrot Cake
Ingredients
- 2 cups Pancake Mix
- 1 1/2 teaspoon baking soda
- 2 teaspoons sugar
- 2 cups sugar
- 1 1/2 cup oil
- 4 eggs
- 1 cup chopped walnuts
- 3 cups grated carrots
- 8 ounces cream cheese
- 1 1/2 teaspoon vanilla
- 1/4 cup butter
- 3/4 pound powdered sugar
Instructions
- In mixer or by hand, beat sugar and oil.
- Add eggs and beat thoroughly.
- Add flour mixture and mix well.
- Stir in nuts and grated carrots.
- Grease and flour 9×12 sheet pan.
- Bake at 325° for 50 minutes or until cake springs back when touched lightly in center.
- Beat cream cheese, vanilla, butter, and powdered sugar together and spread on cooled cake
